Fig Vinaigrette

Ingredients:

1 small shallot, finely diced 

1 T red wine vinegar

1 T balsamic vinegar

salt and pepper to taste  

1 t Dijon mustard

4 ripe figs, peeled and mashed

3 T olive oil

Directions:

  1. Put diced shallot into a small bowl with both vinegars, season with salt and pepper.
  2. After 5 minutes stir in mustard and mashed figs.
  3. Whisk in olive oil. We recommend serving over mixed greens and arugula, top with goat cheese and pine nuts
