Ingredients:
2 T spanish olive oil
1 bell pepper, diced
1 jar Matiz Sofrito
1 1/2 cups Matiz Paella Rice
1/2 t Saffron
4 cups fish or chicken broth
1 pound fresh seafood (mussels, shrimp, clams)
5 Matiz Piquillo Peppers, sliced into strips
lemon wedges for serving
Directions:
- In your Paella Pan, heat olive oil and saute bell pepper.
- Add sofrito and simmer for 5 minutes.
- Add in paella rice and disperse evenly.
- In the palm of your hand, crush saffron lightly and add to pan.
- Slowly add broth
- DO NOT STIR RICE.
- After 10 minutes, place fresh seafood and piquillo peppers into mixture.
- Once liquid is absorbed, maybe 10 minutes later, remove heat, cover with foil, set for 10 minutes.
- Garnish with lemon wedges and serve. Kit.
